Description

Ingredients

  • 8 ounces fresh strawberries, chilled and hulled
  • 1 ripe banana, peeled and frozen
  • 1.5 cups frozen pineapple
  • 5.3 ounces container coconut Greek yogurt
  • 1.25 to 1.5 cups unsweetened coconut milk beverage

Instructions

  1. Puree strawberries in a food processor until smooth.
  2. In a blender, combine banana, pineapple, coconut Greek yogurt, and 1 ¼ cups of coconut milk; blend until fully mixed. If the mixture is too thick, add an extra ¼ cup of coconut milk as needed for desired consistency.
  3. Pour the pineapple mixture into glasses until they are about one-third full.
  4. Add spoonfuls of the strawberry puree to each glass and gently swirl with a butter knife.
  5. Repeat layering with more pineapple mixture followed by additional strawberry puree two more times before finishing.
  6. Serve immediately for best taste or mix all ingredients together in the blender if preferred for ease.
