- 8 ounces fresh strawberries, chilled and hulled
- 1 ripe banana, peeled and frozen
- 1.5 cups frozen pineapple
- 5.3 ounces container coconut Greek yogurt
- 1.25 to 1.5 cups unsweetened coconut milk beverage
Instructions
- Puree strawberries in a food processor until smooth.
- In a blender, combine banana, pineapple, coconut Greek yogurt, and 1 ¼ cups of coconut milk; blend until fully mixed. If the mixture is too thick, add an extra ¼ cup of coconut milk as needed for desired consistency.
- Pour the pineapple mixture into glasses until they are about one-third full.
- Add spoonfuls of the strawberry puree to each glass and gently swirl with a butter knife.
- Repeat layering with more pineapple mixture followed by additional strawberry puree two more times before finishing.
- Serve immediately for best taste or mix all ingredients together in the blender if preferred for ease.
