  2. Hi Amanda Collins, I bake a chocolate cake some weeks ago using baking soda. My kids where amazed! I get so enthusiastic, even I dreamed of selling the cake!! I tried to do it again but I use a Japan cocoa powder and the kids said taste was not good. After searching the web for “the” chocolate powder I used and before I gave up I get to this extraordinary page and now I have more doubts. I think I used non-alkaline, natural roasted Cacao powder. With your knowledge would you be so kind and suggest me two different choices of chocolate powder I probably used?

      “Chocolate powder” can be either cacao powder and cocoa powder, which are a bit different in terms of taste, nutritional values, and cost. You can check my article again to know the main difference between the two to determine which one you want.

      If you want to go for cocoa powder, I’d suggest you get The Cocoa Trader. In case you prefer non-alkalized, you can go for the Ghirardelli Premium Cocoa Powder.

    Hope you’re well.
    I’m after a natural cacao powder that is organic but not raw because I’m concerned about bacteria/mould etc on raw products so I don’t mind if it’s roasted. However as I’ve got food intolerances it also needs to be gluten and vegan. I’m primarily going to use it for baking and maybe hot chocolate. What would be your best recommendations? I’ve purchased the Cacao Barry Cocoa Powder as my alkalized one but I just some help with the natural non alkalized one.
